St. Patty’s day is almost here, and with it, one of McDonald’s most popular seasonal shakes, the Shamrock Shake. Cool, sweet, creamy, and minty green, I think it is one of their best. When I was younger (before calorie counts were so readily available), I paid no attention to what it really cost me health wise to indulge in the sweet Springtime treat. Unfortunately, the stats are not very lucky – a medium drink clocks in with over 60 calories and 22 teaspoons of added sugar. This shamrock shake, on the other hand, will make you feel as if you found a pot of gold. Thick, rich, and creamy, it has just 175 calories, no added sugars, and 4 grams of fat – with all the sweet minty flair of the real deal. Happy St. Pats! Serves 1 2/3 cup 1% (or skim) milk 1 tablespoon vanila sugar-free instant pudding mix 1/2 cup light no-sugar added vanilla ice cream 2 drops green food coloring scant 1/4 teaspoon mint extract 1/2-2/3 cup crushed ice 1. Combine the milk and pudding mix in a blender. Blend to mix. Allow pudding to set for 1 minute. 2. Add ice cream, green food coloring, mint extract and crushed ice and blend on hight until the ice is completely incorportated and shake is thick and creamy. TIP: An immersion blender also works great. Simply follow the directions using a large glass or cup to hold the ingredients.
