
The recipe below is one Blake recently came up with (its so basic Im not even sure you can call it a recipe!). But, its a great example of how simple whole foods clean eating can be in the real world. In fact, its so easy to assemble Blake can make the whole thing himself (as long as I precut the apples.)
To optimize nutrition, make sure you dont just buy any old tortilla. Look for sprouted whole grain tortillas (sold in the frozen section of health foods stores and some mainstream supermarkets). Sprouting releases all the vital nutrients stored within whole grains and is far superior to tortillas made with flour. We like Alvarado St. Bakery brand Sprouted Wheat Tortillas.
Also, feel free to substitute almond or cashew butter for the peanut butter. You can also use finely chopped pears instead of the apples. Feel free to add a bit of cinnamon too. Weve even made this as a dessert just by adding a few mini chocolate chips (you dont need many because when they melt and mix with the nut butter they spread out and get all gooey and yummy). Anyway, with an easy 5-minute whole foods recipe like this theres no excuse for not eating a healthy breakfast.
