October Superfoods: Seasonal Diet Choices For Autumn

No matter how good beets are for you, I could never get myself to eat them. I love pumpkins but not so much to eat them but as to have a pumpkin peel done at my favorite salon. Apple pie sounds wonderful about now, and so does pumpkin pie with a bit of nutmeg! But thought of as super-foods? I think that is a bit mis-leading really, I don't think there is any real super-foods due to the lack of nutrition's in our soil today.

The concept of "super foods" really escapes me. I look for whole grain, no added sodium (or very little) without using refined sugars etc. http://ryankparker.com/super-easy-blender-salsa/

I just made a fantastic pot of chicken and vegetable soup....... It's amazing how fresh and crunchy vegetables with home-made stock can make a meal awesome. Now to add dumplings.......

So glad to see that pumpkins are on the list. To keep them longer, store them out of direct sunlight and don't let them freeze. Keep them in a single layer in your root cellar on top of cardboard and you can enjoy your harvest long past Halloween. You can keep most for up to three months.

Hmm. Cabbage and onions. I feel a good cabbage soup coming out of my kitchen soon. Probably kill all the nutrients in it by making it into a soup though. Haha. One of my friends recently told me about roasted pumpkin. I might try that as well.
